Healthy Holiday Recipes From Sustenance and Sweets

I admit it, I have a sweet tooth, especially around the holidays, so I am always trying to find recipes that are not only yummy but healthy too. McClean of Sustenance and Sweets on Instagram has always been one of my go to follows and this is a holiday recipe she shared with me that I think you will love.

Morning Glory Bread Recipe

With fall upon us and the holidays rapidly approaching, this simple recipe is perfect for family celebrations, potluck contributions, or to give as a gift to a special someone. Packed with juicy raisins, crisp apples, moist carrots, and toasted nuts, this bread has a little something for everyone.

This recipe uses almond and coconut flour making it higher in protein. It’s also packed with vitamins from the apples and carrots, as well as heart-healthy fats from the nuts and coconut oil. The holidays can be a time of indulgence and while this bread tastes decadent, it’s one you can feel good about eating! It’s also gluten-free and naturally sweetened making it a great option for those with dietary restrictions or food allergies. This loaf is a crowd-pleaser and will be met with cheers!

Ingredients (Gluten and Refined Sugar-Free)

  • 2 cups almond flour
  • ¼ cup coconut flour
  • 1 ½ tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • Sprinkle of nutmeg
  • ½ cup grated carrot
  • ½ cup chopped apple
  • ½ cup raisins
  • ½ cup chopped pecans and walnuts
  • 3 eggs
  • 1/3 cup coconut oil
  • Scant ¼ cup honey
  • ¼ cup maple syrup
  • 1 tbsp vanilla extract

Directions

Preheat the oven to 350 and line a loaf pan with parchment paper. Mix all dry ingredients together first and then add the wet ingredients. Mix until combined. Fold in the carrot, apple, raisins, and nuts. Bake for 45-55 minutes until the top becomes golden brown. Remove from the oven and let it sit in a loaf pan for 15 minutes before removing and serving. It keeps for one week covered in the fridge.

Serving Suggestions

  • Plain with a glass of your favorite milk
  • Warmed with salted butter or nut butter (pecan butter is my personal favorite!)
  • Warmed with a scoop of vanilla ice cream
  • Served with plain Greek yogurt or cottage cheese for an easy and delicious breakfast
